What to Look For in a Commercial Pie Warmer

Temperature Control
Hot foods should be kept at 60C or above to avoid bacteria and the risk of food poisoning. It is particularly vital that high quality heated display cabinets are installed to ensure reliable, even heating of baked goods containing meat such as pies, pasties and sausage rolls.
Bacteria grow rapidly in what is often referred to as the ‘danger zone’ which is between 5C and 60C. In fact, bacteria can double in numbers in as little as 20 minutes!
As a guide, the accepted ideal standing temperature for stored hot food is as follows:
- Food held at a temperature between 50C – 60C for less than two hours can be consumed or put in the refrigerator
- After two to four hours, it can be consumed but not returned to the refrigerator
- After four hours it must be thrown away.
It is always best to err on the side of caution. Keep food refrigerated until needed and carefully calculate the optimal number of items to place in the hot food cabinet to meet demand but avoid food wastage.
